Peas and Thank You

Hey friends! How’s your weekend going?

We’re having a productive day—so far I’ve checked off most of the items on my to do list, including a lil nap ;) After work we stopped by my sister’s house for a visit. My nephew was very excited to show Uncle Kit his zombie impression, and my niece was excited to model her new shoes for me.


They’re pretty excellent…I’m thinking of getting myself a pair for the wedding. They even light up when you walk (or jump…or dance…)!

I always get excited when something comes in the mail, even if it’s something I’ve been expecting. This week marked the hotly anticipated arrival of my new book Peas and Thank You, by Sarah Matheny, otherwise known as Mama Pea.

I love this book. The recipes are simple, meatless, and healthful, and they’re accompanied by cute little stories told by the sometimes sweet sometimes snarky Mama Pea. I definitely recommend picking this one up!

We decided to have Peas and Thank You Night in the AVT household this week, so we flipped through the book searching for the recipe that excited us both the most. We decided to make the Thai Veggie Burgers, and another recipe from Mama Pea’s blog that I’d been meaning to try for a few weeks now, Dill Pickle Fries.


My groom has a love affair with French fries of all varieties, and I was hoping to make a slightly healthier version that might satisfy his fry-tooth. These did NOT disappoint. And they were so easy! That’s how good they are.)


As for the burgers, I knew we were in for a treat because the “dough” was phenomenal. It’s common knowledge that if something is good before you cook it, it’s probably going to be delicious when it’s finished also.


The only downside about making this recipe is that I learned a valuable lesson. My beloved Vitamix is not for veggie burgers. As you can probably tell from the photos, the ingredients were completely pulverized. It’s not necessarily a bad thing, but I generally like to keep a little bit of chunkiness in my veggie burgers, lest the dough have a paste-like consistency.

Nevertheless, these burgers were awesome! I topped them with a little vegan teriyaki mayo (just 1 part teriyaki to two parts vegan mayo), butter lettuce and pineapple rings. The combo was amazing! I’m so glad I made these and it’s definitely a veggie burger recipe I’ll be turning to again in the future. But next time I’ll be sure to use my food processor. And maybe I’ll serve them with a side of peas :)
