We just came back from an amazing Mexican dinner with our awesome friends Frank and Dani. We always have such a great time with them! We hope to be their next door neighbors some day. It’ll be just like Friends.

5 Things to Make or Bake
Penne and Broccoli in Dorrito Cream Sauce…and it’s VEGAN…and does not actually contain Doritos. Get excited.
Inside Out Chinese Spring Roll Salad…this has been making the rounds on Pinterest and it looks SO GOOD. At first I was like, meh it’s just a salad, but the more you look at it, the more delicious it seems.
Potato Pesto Focaccia …remember this recipe? Sometimes I like to look back through all my recipes and remember how much I enjoyed them. This is one of my favorites and I’ve gotten lots of great feedback on this one too…if you haven’t tried it, today is the day! I also like to look at how far my photography has come…or at least my lighting.
Roasted Sweet Peppers and Carrots with Orange and Hazelnuts…light and refreshing with tons of vitamins!
This Tempeh Sandwich…from Running to the Kitchen! Raw tempeh, cheddar, jelly, apple slices, sprouts and cabbage. For some reason this sounds amazing to me, even though I’m not sure how I feel about raw tempeh. It looks so pretty! And I trust Gina because she went to college in the same town I went to law school ;)
What’s your favorite spring produce from this list? I choose leeks! They have a mild oniony flavor, and they’re great in everything from pasta to stir fry, to things like this.

How handy :) I LOVE those Cadbury Mini Eggs…but they’re definitely not healthy!
I find this intriguing…but I’m not sure if I’m brave enough to actually do it. Do I really want something growing in my fridge? On purpose?
